what is skillet bacon jam?
what the heck is bacon jam?....
they take a big bunch of really, really good bacon, and render it down...add a bunch of spices..onions, etc. and let it simmer for about 6 hours...give it a quick puree, blast chill it...and you have bacon jam...
You can put it on your burger, serve it on crostini, perhaps on a grilled cheese, as a substitute for bacon on a BLT, or maybe the base for a vinaigrette.
Here are some more uses:
on baked brie, sautéed in some scallops, roasted with some brussel sprouts, wilted in a spinach salad, on toast with a fried egg on top, finish a potato soup with a dollop...

Oh man...that sounds heavenly...and would be so much less work than cooking up bacon every time!
