{Recipe} Loaded Baked Potato Salad

We love to cook on our grill ~ whether it be burgers, ribs, pork steaks ... we also love to have potato salad.  I usually make the traditional potato salad with mayo, potatoes, eggs, etc.  I found a great new recipe for a Loaded Baked Potato Salad.



Ingredients:
4 large potatoes ~ whatever kind you like best
1/4 cup mayonnaise

1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup freshly chopped chives, divided
Bacon Bits (I purchased the real bacon bits in a package at the store)

salt and pepper to taste
Serves 4 - 6

(I doubled the ingredients to make a larger serving)

Directions:
In a small bowl, I mixed together mayonnaise and sour cream.   Combine these well and then add half of the chives, cheese, and pepper.  Taste your mixture to see how much salt & pepper you want to add.  Put in in fridge for a bit.   Peel and cube your potatoes in to bite size pieces.  Use a large pot, add your potatoes, cover with water and boil until fork tender {approximately  20 minutes ~ Make sure you do not cook them too long, you don't want mashed potatoes}.


When potatoes are ready, drain and let cool.  Put potatoes in a large bowl or dish and combine with sour cream mixture.  Top with remaining half of chives and crumbled bacon.  I served my chilled, but you could serve it immediately at a room temperature.
